…well I definitely do sometimes, but not today!
So, a little while ago Starbucks came out with a new gluten-free orange cake. At the time that it came out, I was gluten-free and was so excited to try it. My review? It is absolutely amazing! Decadent, flavorful, moist… and you can’t in the slightest way tell that it’s be gluten-free! Starbucks certainly succeeded with this new addition to their menu, but by looking at the incredible short list of easy to recognize ingredients (whole eggs, Valencia orange pulp, almonds, sugar, orange peel, gluten-free baking powder, orange oil) I figured it really wouldn’t be too hard to replicate it at home, so I did.
Not-so-Starbucks Orange Cake(recipe adapted from Elana’s Pantry)
Ingredients2 oranges 4 eggs 3/4 cup honey 2 cups blanched almond flour 1/2 teaspoon salt 1 teaspoon baking soda optional additions: 1 teaspoon vanilla extract, 1 teaspoon cinnamon, 1/4 cup unsweetened coconut, 1/3 cup dried cranberries… or whatever suits your taste. I recommend the vanilla, as it softens the extremely strong orange and citrus taste.
DirectionsBring a large pot of water to a boil, and add in oranges (whole orange, including peel). Continue to boil until softened (about 1-2 hours.) Once soft, add both whole oranges to a food processor (depending on size of your processor you may need to cut oranges into quarters or in half) and process until smooth. Add in the rest of your ingredients (again, if your food processor is a little on the small side, you can pour the orange puree into a separate mixing bowl and beat all ingredients together using electric mixer) and mix until completly blended. Pour batter into a 9-inch round cake pan, and bake in preheated 375F oven for about 45 minutes, or until a toothpick inserted into center comes out clean. (My batter ended up being too much for the cake pan alone, so I also made some mini muffins! If you do this just keep in mind that they cook a lot faster then the cake – only about 20 min).
See, who needs Starbucks, when you can make your own cake at home?! This recipe really comes out great, and tastes just like the one from Starbucks! If you don’t have time do whip up this cake yourself though, I highly recommend going to your nearest Starbucks and ordering one of their Gluten Free Valencia Orange Cakes!
